Caldereta is a classic Filipino dish and a comforting stew. There
are many variations on it using goat meat, pork, beef, mutton or even chicken. The
dish is originated in Spain; the word caldereta means a stewed fish or meat,
named from the caldera or cauldron in which it is cooked. now here’s Beef Caldereta
recipe that I’m going to share with you in courtesy of Mama Sita’s Recipe. This
recipe may not new to you but this is a simple way of making it. So worry no
more! Just make sure you have the “Mama
Sita’s Spicy Sauce (caldereta) Mix”. You can buy this in Asian store near you.
INGREDIENTS:
1 pouch (50 g) Mama Sita’s Spicy Sauce (Caldereta) Mix
1 kg (2.2 lb) beef brisket (cut into 1 ½ cubes)
1 cup (190 g) each potatoes/ carrots- cut into serving portions
1 pc bell pepper (1 ½ triangle cuts)
½ cup (100 g) green peas
¼ cup (28 g) pitted green olives (optional)
2 cups (500 ml) water
3 tbsp (45 ml) cooking oil
METHOD:
1. Pan fry meat in heated
cooking oil until brown
2. Add water, bring to a boil. Simmer until meat
is tender. Add more water, as needed.
3. Add Mama Sita’s Caldereta
Mix, stir. Add the potatoes and carrots. Simmer.
4. Lastly, add the rest of
the vegetables. Cook until done. Serve hot and of course with rice.
